Blueberry Mango Cobbler
Dessert can be so simple, yet so delicious! This beautiful cobbler contains the nutrition of mango, banana, blueberries, nuts and dates. That's it.
Mangoes are so sweet and blend beautifully into a really luscious sauce.
The date nut crumble could also be pressed into pie or tart shells to make a raw crust, crumbled over any fruit, or rolled into balls and eaten as snacks.
Serves 2-4
1 cup pecans
7 dates, pitted and soaked
Process pecans and dates in a food processor using an S blade until a crumble is formed.
2 mangoes
1 cup blueberries
Peel and pit mangoes. Place one mango in a blender and puree until smooth. Chop the other mango.
Place some crumble in a glass. Top with mango puree followed by chopped mango and blueberries.
If desired top with frozen banana ice “cream” and some chopped pecans. This is simply 1 or 2 frozen, peeled bananas processed in a food processor or blended in a Vitamix until the consistency of soft serve ice cream.
